SLMG has operated the Laxfirth Abattoir (license no 1137) since November 2003. SLMG process lamb and mutton at the abattoir under the Taste Shetland brand which was launched in 2005.

Under the brand, SLMG market a unique series of high quality, premium meat products. The brand was developed from specially commissioned market research and has won critical acclaim from producers and customers alike including numerous national awards and shortlistings.

SLMG source from member farmers and crofters and actively encourage these producers to finish stock in accordance with stringent customer requirements. The abattoir employs an entire suite of innovative pre and post slaughter techniques to ensure the outstanding quality of the raw material is maintained and actually improved upon as it moves through the slaughter line and onto the end customer.

SLMG pays its member producers a price enhancement for finishing quality stock and processing them through Laxfirth. In 2005, SLMG sourced livestock from 58 individual producers from around Shetland.

Many customers are now interested in provenance and SLMG supplies information on the origin of the meat with each order.

The abattoir operates a management system which conforms to ISO9001 specifications.

The Laxfirth Abattoir is also fully processor-assured under the Quality Meat Scotland Assurance Scheme certificate number: 060011005. It also has full Soil Association accreditation.

Our abattoir is also assured under the SALSA (Safe And Local Supplier Assurance) scheme. SALSA is designed to help local and regional food and drink producers supply their products to national and regional buyers. The scheme is endorsed by DEFRA and the Food Standards Agency and is widely supported by many of the UK’s leading food buyers from the retail and foodservice sectors.
